Caramelized Onion + Sage Chicken Stuffing Balls

You are going to want these on your Thanksgiving table guys. They are the perfect classic stuffing flavor with that added richness of the caramelized onions. I love to use chicken but you could do pork if you prefer. I add in apples for some sweetness. Lots of sage. The caramelized onions and roll them in to balls before pan frying them and then baking them in the oven.


They are a dream , easy to make and I love the ball shape because they are just cuter. We do stuffing balls in England with our Sunday roasts and it feels like a more concise way of eating them.



Recipe bellow:



For the onions -


1 large sweet onion, cut in to thin slices

2 sprigs of thyme

Drizzle of olive oil

Sprinkle of salt

Scrunches of pepper

1 tbsp balsamic vinegar

1 tsp maple syrup (or sugar of choice)


Caramelizing onions is a fairly long process but totally worth it. The key is to do it low and slow, stirring occasionally. I add in a little balsamic vinegar and a touch of maple syrup with them along with some sprigs of thyme and let them get sticky and melty for around 30 minutes total.


For the stuffing balls:


1 lb chicken breakfast sausage meat or sausages cut open and removed from casing (organic, pasture raised)

3 tbsp fresh sage, finely diced

The caramelized onions

1/2 cup, finely diced apples

2 cups bread of choice, made in to course breadcrumbs (or organic stuffing mix)

1/2 cup chicken broth


I like to make my own breadcrumbs but you absolutely don’t have to. I’ll use some stale high quality organic bread. Crumble it up and bake them in the oven until golden with a big drizzle of olive oil at 350 F. But you could absolutely just use a wholefoods organic stuffing breading mix.


Now add the stuffing in to your bowl with the chicken broth to get the breadcrumbs softened. Stir it all around.


Then add in the sausage, apples, sage and onions.


Mix with a spoon to combine and then take one big scoop with your spoon and roll them with your hands in to balls.


In a cast iron skillet, over a medium high heat, add in some olive oil and then once hot, place in your balls.


Cook for about 3-4 minutes each side until golden brown.


Then place them in a preheated oven at 400 F for 30 minutes until cooked through.


Can’t wait for you all to try the flavor bomb of these stuffing balls. They are so good dipped in gravy and perfect on your table.
