This is a healthy dish that's so flavorful. It's also gluten free naturally and great for a quick week night meal. The Thai slaw is fresh and crunchy and bright and even though it's by no means authentic, it's a yummy dish that will become a go to for you as it has for me.
This recipe makes enough for 2 people so double if you want to make more.
Ingredients:
Chicken -
1.5 cups finely shredded coconut
salt/pepper
1 egg, beaten
1 cup Gf flour
2 chicken breasts/cutlets, butterflied and pounded thin
Slaw -
1 bag Cabbage slaw mix - red, green & carrot
Handful of fresh cilantro
2 cups bean sprouts (optional)
1 tbsp tamari
1 tbsp rice vinegar
Juice of 1/2 a lime
1 red jalapeño, finely diced
1 clove garlic, crushed
1 tsp fresh ginger, grated
1 tbsp fish sauce
1 tbsp honey
1 tsp peanut oil
Unsalted roasted peanuts, roughly chopped
Peanut sauce:
2 tbsp smooth peanut butter (No added sugar)
1 tsp sesame oil
Juice of 1/2 a lime
1 tbsp tamari
1 tsp rice vinegar
1 tsp sriracha or chili paste
Start by pounding the chicken cutlets until thin on a plastic cutting board covered in parchment paper and season the chicken lightly with salt and pepper on each side.
Coat the cutlets in gluten free flour, then in to the beaten egg, and then in to the shredded coconut, seasoned with more salt and pepper.
In a cast iron skillet or non stick pan, sear the chicken on each side until golden, (around 3 minutes), in a little melted coconut oil or peanut oil.
Then place the chicken in the skillet in to a preheated oven at 400 F to finish cooking for 10-15 minutes.
While your chicken is cooking in the oven start on your slaw and peanut sauce.
For the slaw, add all the dressing ingredients in to a bowl and whisk together. Add in your cabbage mix and fresh cilantro and toss with your tongs to combine.
For the peanut sauce, add all the ingredients together in a little bowl and whisk until smooth and incorporated.
Remove the chicken from the oven and slice to serve.
Arrange the slaw on a plate, along with the chicken and add some freshly chopped peanuts and extra cilantro to serve.
Serve with some slices of lime and the peanut dipping sauce and enjoy this crunchy, fresh, bursting with flavor dish that will tantilize your taste buds.
