Key Lime Pie Energy Balls
I love an energy ball, full of goodness for a quick mid afternoon pick me up or even as a breakfast! I also love Key Lime Pie, and as many of you know, my recipe for Key Lime Pie is a staple on my website but it's not quite as healthy to say the least. So I decided to combine the two and make a healthy protein ball that tastes like key lime pie with that delicious citrus kick.
1 cup pitted mejool dates
1/2 cup unsalted cashews
1/2 cup unsalted almonds
1/3 cup shredded coconut
1 scoop unflavored protein powder
1 tbsp chia seeds
1tbsp hemp seeds
Juice and zest of 2 small limes and 1 big
2 tbsp maple syrup
Extra shredded coconut and lime zest to roll the balls
Add the almonds and cashews in to the food processor and blitz until fine crumbs.
Add in the other ingredients like the dates and coconut, protein, powder, lime etc and blitz until combined.
With a 1 tablespoon measure, scoop out a heaped measurement of mixture and roll in to balls in your hands.
Roll the formed ball in the coconut and lime zest mixture and then pop them in to an air tight container and in to the fridge to set for 1 hour to overnight, depending how long you can wait!
