Mexican Street Corn

This is my recipe for Mexican Street Corn you can make at home on the grill at your summer BBQ with friends. It's a quick and easy side dish and is so flavorful. This is my take on it:

1/4 Cup Mayo
1/4 cup Sour Cream
2 Tsp Lime Juice (plus wedges for garnishing)
4 Ears of Corn
1/2 Tsp Ancho chili powder
1/2 Cup Cotjia Cheese, crumbled
1/4 Cup fresh cilantro, finely minced
Heat your grill and while it's heating, combine the sour cream, mayo and lime juice in a bowl. Then in a separate bowl, crumble the cheese together with the ancho chili powder and the cilantro.
Place the corn on the hot grill and cook while rotating occasionally for about 8-10 minutes. Once cooked, while the corn is still piping hot off the grill, brush the Mayo and sour cream mix over the corn. Then evenly sprinkle the cheese mix over. Serve with the lime wedges for your guests to squeeze on top.

Ultimately though, this needs to be a Speedmaster, right? Oh, it is.
