Pumpkin Peanut Butter Protein Balls

I was trying to come up with a healthy but delicious recipe for Halloween/Fall that are the perfect sweet treat to keep in your fridge/freezer and these are MAGICAL.


Not only are they vegan and gluten free, they are so easy to make and great for a Halloween party or just as a healthy sweet snack.


If you prefer them a bit harder you can keep them in the freezer too.



Recipe bellow:


Filling:

1/4 cup pumpkin purée

1/4 cup peanut butter (you can use crunchy or smooth)

1/4 cup maple syrup

1 scoop unsweetened or vanilla protein powder

1/2 cup gluten free, coconut or oat flour

1/2 tsp vanilla extract

1 tsp pumpkin pie spice

Pinch sea salt


Coating:

1.5 cups vegan chocolate chips (I like hu kitchen - use code CHLOESKITCHEN for 10pc off your first order)

1 tbsp coconut oil

Maldon flakey sea salt or Halloween sprinkle for topping


Mix all the filling ingredients together in a bowl until a stiff mixture forms. Place it in the fridge for 20 minutes before rolling in to 1 tbsp portion balls with your hands.


Melt the chocolate either in a pot over the stove or in the microwave with your coconut oil.


Dip your balls in to the chocolate and place on a lined baking sheet with parchment paper.


Sprinkle with flakey sea salt or holiday themed sprinkles of choice.


Place them in the fridge for at least 1 hour to set. And enjoy them from the fridge or freezer!
