Roasted Butternut Squash with Feta, Honey & Thyme

Here is another simple thanksgiving side dish idea. It's such a pretty dish that’s so easy to make but incredibly satisfying. I love butternut squash EVERYTHING at this time of year. It’s so comforting and versatile for pastas, soups, risottos or just roasted as a yummy side. I would highly recommend making this for your Thanksgiving dinner too!


You will need:

1 1/2lb Butternut Squash (pre-cut is always easier)

4 Sprigs of Thyme (plus extra for decorating)

3 Tbsp Honey

2 Tbsp Olive oil

1 Tsp Black Pepper

2 Tsp Salt

1/2 Cup Crumbled Feta


Preheat the oven to 425 F


This really is the easiest recipe in the world. Which makes it great for Thanksgiving when you are mainly focused on the turkey.


Cut up the butternut squash in to cubes, or just buy pre-cut if you can get that and place it on a baking sheet. Pour over the olive oil, salt, pepper and drizzle over your honey. Toss it all together on the tray and then pop over some sprigs of thyme and bake in the oven for 25 minutes. Toss the squash half way through cooking so one side doesn't get burnt.


Once caramelized and golden, remove from the oven and plate. Sprinkle over your feta, some extra sprigs of thyme to make it look pretty as well as another drizzled of honey.
