Strawberry Coconut Mound Bars

These sweet treat bars are perfect to keep in the fridge as such a delicious vegan, gluten free healthy snack or dessert. They are little bites of heaven! 🍓

The recipe is quick and easy to follow. I also have a reel on my instagram with how to make them.

Just make sure to use organic, high quality ingredients and vegan like @hukitchen or @lilys_sweets ♥️


1⁄3 cup freeze-dried strawberries + more for garnish

2 cups unsweetened coconut flakes or shredded coconut

3 Tablespoons pure maple syrup

7 Tablespoons coconut butter

2 teaspoons pure vanilla extract

1 pinch sea salt

2 cups (about 6 ounces) semi-sweet or dark chocolate chips

1 Tbs unrefined virgin coconut oil

Blend the coconut butter, coconut flakes, strawberry, and maple syrup etc, together in a food processor until it clumps together.

Press in to a loaf pan lined with parchment paper and freeze.

After 30 minutes to an hour, cut the bars in to 12 pieces.

Dip in the melted chocolate and coconut oil and top with more freeze dried strawberries.

Keep in the fridge to stay cold. Enjoy! 🥰
