Excited to share with you today my green goddess immune boosting soup! 🌱 It’s packed full of superfoods like kale, broccoli & spinach, along with white beans for protein and to make it feel creamy. Plus I used my miracle broth as its base for even more nutrients! So it’s perfect for cancer patients, fellow survivors and thrivers like me or anyone who is trying to get over the sniffles and needs a little immune system boost! And I promise it doesn’t taste like grass. It’s a great soup to meal prep ahead and keep in the fridge for the week! 🫶
Recipe:
1/2 a yellow onion, diced
3 cloves garlic, crushed
1 zucchini, diced
1 cup broccoli florets
1 leek, diced
2 cups spinach
1 cup lacinato kale, chopped
1/4 cup fresh parsley
1 14oz can white beans (great northern or cannellini)
Juice of 1 lemon
Drizzle of olive oil
1 pint vegetable or chicken bone broth (or miracle broth) as base
Season with salt and pepper to taste
Sauté your onion, celery, leeks, zucchini and broccoli in a little olive oil until they have sweat slightly for about 3-5 minutes in large pot over a medium heat with some olive oil. Season with salt and pepper.
Add in your kale and spinach with parsley and the white beans and sauté until just wilted.
Then add in your miracle broth or chicken or regular vegetable broth and let it cook for around 5-10 minutes.
Blend in a vitamix until smooth and creamy.
Finish with the juice of one lemon in the soup and stir in.
Add over a drizzle of olive oil, extra squeeze of lemon juice if needed and enjoy!
